GARCES TRADING COMPANY DEBUTS MONTH-LONG PAELLA MADNESS CELEBRATION WITH CRAZY TWISTS ON THE TRADITIONAL SPANISH DISH BY CHEF JOSE GARCES

Garces Trading Company is putting a Spanish foodie twist on March Madness with a new month-long celebration called Paella Madness. Chef Jose Garces has created four crazy and modern twists on the very traditional Spanish dish. Each week look for a new paella to debut, including braised short rib paella, whole roasted trout paella with squid ink bomba rice, acorn squash paella, and whole roasted chicken with fig and pine nut paella. Each featured paella comes complete with a choice of Ensalada Verde or Semplice Salad, plus family-style portions of Beef Sliders, Chicken Brochettes and Octopus & Fingerling Potato Brochettes. Garces fans can host a Paella Party at their homes with either the heat and serve option or the ready-to-eat option. Pick-up and delivery are available out of the Garces Trading Company ghost kitchen and virtual marketplace, operating from The Olde Bar in Old City at 125 Walnut Street. Paella Madness features require 24 hours advance notice. Paella is one of Chef Jose Garces’ favorite signature dishes. He features paellas on several menus, including at his flagship restaurant Amada, as well as Tinto. As Garces counts down the National Paella Day on March 27th, Chef wanted to celebrate this dish not for just one day, but instead for an entire month. For Paella Madness, Chef took this traditional Spanish dish and created new inventive and fun modern recipes that utilized non-traditional vegetables, proteins and spices for new twists on the Spanish classic.

Trucha al Horno Paella

Calabacitas Paella
$90 serves two (for additional add $45 per person)

March 22-28, 2021
Pollo Y Higo Paella
$100 serves two (for additional add $50 per person)
Whole Roasted Chicken, Wild Mushroom Bomba Rice, Red Watercress, Fig & Pine Nut Escabeche, Saffron Aioli,  plus Chorizo Beef Sliders, Chicken Brochettes, Octopus & Fingerling Potato Brochettes, and a choice of Ensalada Verde or Semplice Salad.

Each featured paella is only available for one week through Garces Trading Company. Orders can be placed in advance for future weeks, but can only be picked up on the week of the featured selection.
